As our micro-farm begins to produce more tomatoes than we are currently selling, Tracy & I have begun the age old art of canning. Food preserving is the perfect way to keep eating “local” all winter long. By freezing, canning, or dehydrating, you can stock your pantry with food from your garden (or food purchased from local farms). While the task may seem daunting at first, it is really quite easy once you dive in and try it.
